If you are a mashed potatoes fan, you may like this recipe. This is one of my family’s favorite recipes. Happy cooking!
- 1 pound ground hamburger enough dry instant potato flakes for 8 servings
- 1 egg 1/8 teaspoon pepper
- 1 tablespoon instant onion
- 1/4 cup ketchup
- 1 cup milk
- 1/4 cup shredded cheddar cheese
Heat oven to 350° F. Mix meat, 1/2 of instant potato flakes, egg, salt, pepper, onion, ketchup, and milk. Spread in ungreased 9 inch pie pan. Bake uncovered 35 to 40 minutes. Prepare remaining dry instant potato flakes as directed on package for four servings. Top baked meat loaf with these prepared potatoes; sprinkle with cheese. Bake 3 to 4 minutes longer or until cheese melts. Yield: 4 to 5 servings
