Fresh Broccoli Salad
- 2 heads of fresh broccoli
- 1 red onion, chopped
- 1/2 pound bacon
- 2/3 cup raisins
- 3/4 cup sliced almonds
- 1 cup mayonnaise
- 1/2 cup white sugar
- 2 tablespoons white wine vinegar (or just white vinegar)
Place bacon in a deep skillet and cook over medium high heat until evenly brown (or use pre-cooked). Cool and crumble.
Cut the broccoli into bite-size pieces and chop the onion. Combine with the bacon, raisins, your favorite nuts and mix well.
To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.
Note: Substitutions - grapes (red or green) instead of raisins; sunflower seeds for almonds.
You can also add to this salad, like cauliflower. Yield: 8-10
