School is soon upon us and quick meals are a must.
School activities of any kind can make it tough to make a meal but not for a slow cooker. Here is a hearty meal that will keep your family good to go found in the “Fix-it and Forget-it” cookbook.
Waldorf Astoria Stew
- 3 lbs. beef stewing meat, cubed
- 1 medium onion, chopped
- 1 cup celery, sliced
- 2 cups carrots, sliced
- 4 medium potatoes, cubed
- 3 tablespoons minute tapioca
- 1 tablespoon sugar
- 1 tablespoon salt
- 1/2 teaspoon pepper
- 10 3/4 ounce can tomato soup
- 1/3 cup water
1) Layer meat, onion, celery, carrots, and potatoes in slow cooker. Sprinkle with seasonings and tapioca. Add soup and water.
2) Cover. Cook on Low for 7-9 hours.
Yield: 6-8 Servings
