The old standby

The old stand by Everyone knows how to make Mac-n-Cheese from the box, but do you know how to make it from scratch? And to make it from scratch in the microwave?

Here is a recipe from my “Kenmore Microwave Cookery” cookbook that may change your way from box to homemade.

Macaroni and Cheese

  • 2 cups elbow macaroni
  • 2 tablespoons butter or margarine
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1 tablespoon instant minced onion (optional)
  • 2 cups shredded Cheddar cheese

1) Cook macaroni according to package directions; drain. Place in 2-quart microwave proof casserole dish; set aside.

2) Place butter in 4-cup measuring. Cook on Hi for 1 minute, or until melted. Stir in flour until blended.

3) Pour milk into 2-cup glass measure. Cook on 70% for 2 minutes. Stir into flour-butter mixture.

Cook on HI 5 to 6 minutes or until thickened, stirring frequently. Add salt and onion. Add cheese; stir until melted.

Pour over macaroni; blend well. Serve immediately.

Note: I would add the onion with flour-butter mixture for it to cook and soften.

Servings: 4 to 6
