Favorite Time of Year

As I am looking outside the window, I am dreaming of Spring. It just doesn’t seem fair that we get teased with Spring and then this (snow) happens.
But, I will still dream of my favorite time of year (Spring) and make a dessert that will remind me of what will soon be.
Spring Fling Cake
- 1 yellow cake mix
- 4 eggs
- 1/2 cup oil
- 1 small can Mandarin oranges (with juice)
Mix all together and beat 2 to 3 minutes with mixer. Put in greased 9 x 13 pan. Bake at 350° for 35 to 40 minutes.
Frosting: In large bowl, mix 1 small box instant vanilla pudding and 1 (15 1/2 ounce) can crushed pineapple (with juice) until thick.
Fold in 1/4 teaspoon lemon flavoring or lemon juice and 9 ounces Cool Whip.
When cake is cool, frost.
