Lent Lent is here and so is the season of Fish Fry Friday.

But what if there isn’t a fish fry around? What can you make at home?

How about Shrimp Quesadillas!

I found this recipe online at McCormick.com.

Spicy Shrimp Quesadillas

  • 1 pound cooked shrimp, chopped
  • 1/3 cup McCormick® Cajun Style Seafood Sauce
  • 1 cup shredded Mexican cheese blend or Cheddar cheese
  • 2 green onions, chopped 6 flour tortillas (8-inch)

Preheat oven to 400°F. Mix first 4 ingredients in medium bowl until well blended.

Place 3 tortillas on baking sheet. Spread with shrimp mixture, then top with second tortilla.

Sprinkle tops with additional cheese and green onions, if desired. Bake 5 minutes or until cheese melts.

Cut each quesadilla into 8 wedges. Serve warm.

Yield: 4 servings
