Cheesy Potatoes

I always look forward to the holidays because I know wherever I go there will be some kind of potato dish. (I know it is too early to talk about the holidays but I did it anyway!)

Try the Cheesy Garlic Sweet Potato Gratin at the end of the recipe for a little bit of variety.

Cheesy Garlic Potato Gratin

  • 3 pounds medium Yukon gold potatoes (8), thinly sliced (about 10 cups)
  • 2/3 cup sliced green onions (6)
  • 6 cloves garlic, minced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 cups shredded Swiss, Gruyere, provolone, or Jarisberg cheese (12 oz)
  • 2 cups whipping cream
  • Green onion slivers (optional)

1) Preheat oven to 350°F. Grease a 3-quart rectangular baking dish. Layer half of the sliced potatoes and half of the green onions in prepared dish. Sprinkle with half of the garlic, salt, and pepper. Sprinkle with half of the cheese. Repeat layers. Pour whipping cream over top. Cover with foil.

2) Bake for 1 hour 10 minutes. Uncover; bake for 20 to 30 minutes more or until potatoes are tender when pierced with a fork and top is golden brown. Let stand for 10 minutes before serving. If desired, sprinkle with green onion slivers.

Cheesy Garlic Sweet Potato Gratin: Prepare as directed, except substitute sweet potatoes for half of the Yukon gold potatoes.
